Thai Mango Cabbage Wraps (Printable)

01 - Carefully remove 8 large cabbage leaves from the head, trimming the thick stem end if needed. Rinse thoroughly under cold water and pat dry with paper towels. Arrange the cleaned leaves on a large serving platter or clean work surface.
02 - In a large mixing bowl, combine the sliced mango strips, julienned carrot, thinly sliced red bell pepper, julienned cucumber, fresh cilantro leaves, and fresh mint leaves. Toss gently to distribute the herbs evenly throughout the vegetable mixture.
03 - In a separate medium bowl, whisk together the creamy peanut butter, lime juice, soy sauce, maple syrup, grated ginger, minced garlic, and 2 tablespoons of warm water.
