01 - Heat a large skillet or griddle over medium heat until evenly hot.
02 - Place one tortilla on a clean surface. Distribute approximately 3/4 cup of shredded cheese blend evenly over half the tortilla. Layer with desired optional fillings. Fold tortilla in half to form a half-moon shape.
03 - Transfer filled tortilla to preheated skillet. Cook for 2-3 minutes on first side, pressing gently with spatula. Flip and cook second side for 2-3 minutes until tortilla achieves golden brown color and cheese is fully melted.
04 - Remove quesadilla from skillet and transfer to cutting board. Allow to cool for 1 minute, then cut into 3-4 wedges.
05 - Repeat assembly and cooking process with remaining tortillas and filling ingredients.
06 - Arrange quesadilla wedges on serving plates. Accompany with sour cream, fresh salsa, guacamole, and fresh cilantro sprigs.
