01 - Preheat the oven to 375°F. Line a baking sheet with parchment paper.
02 - Combine mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave for 1-2 minutes, stirring every 30 seconds, until melted and smooth.
03 - Add almond flour, baking powder, and salt to the cheese mixture. Mix well, then add the egg. Mix until a soft dough forms using a spatula or your hands.
04 - Place the dough between two sheets of parchment paper. Roll out into a rectangle about ¼ inch thick. Transfer to the prepared baking sheet with bottom parchment.
05 - In a small bowl, mix melted butter with minced garlic and parsley.
06 - Brush half of the garlic butter over the dough. Bake for 15-18 minutes until golden brown.
07 - Remove from oven, brush with remaining garlic butter, and sprinkle with Parmesan cheese if desired. Slice into 8 breadsticks and serve warm.
